La galette des rois (Cake of kings)

Pastry which makes kids and adults overjoyed. The Galette is a french tradition for epiphany, made with 2 puff pastry between them, you can find a frangipane and a hidden « fève », which is like a little figurine. In the tradition, we cut the galette in the number of persons around the table and one more « for the poor » and you give this one to the first poor you meet. The youngest has to go under the table and distributed all parts of the pastry. The one who finds the « fève » wins and becames the king for the day.

History facts: The galette is made only for epiphany, this tradition come from this celebration and started with bread and bean. Years after years the bread became a cake and the bean become a figurine.

Ingredients:

  • 2 puff pastry
  • 140g powder almond
  • 100g sugar
  • 2 eggs
  • 70g butter
  • 1 egg yolk
  • 1 « fève », figurine

Recipe:

  1. Put the puff pastry paste on baking paper and prick the paste with fork.
  2. In a bowl mix almond powder, sugar, 2 eggs and place soft butter in the centre of the first puff pastry, display and hide the figurine in the mixture.
  3. Cover everything with the second puff pastry and bond the borders of the 2nd puff pastr.
  4. Draw something on the top of the cake with knife and baste a mix of milk and egg yolk.
  5. Put in the oven for 20 - 30 min at 200°C. Check when it look like gild.

 

Epiphany Galette rhyme with cider so drink a glass of cider with your pastry and it’s even better then. Eat with your Family or your friends and try to be the king!

The galette is a dynamic tradition and having fun with the recipe! You can put rum, chocolate, vanilla or do the same with apples. Every family has a different galette so you can also create yours!
